What Delight Does Hurry Hide?
I was thinking today about the little delightful moments in life that we miss when we are in a hurry to accomplish things quickly.
This morning I decided that some rhubarb with my oats would be a lovely spring breakfast. I took a handful of rhubarb out of the refrigerator and quickly rinsed it off. Then I lined up the ends of the stalks so that I could cut off the brown tips all at once.
As I got ready to slice the rest of the rhubarb into 1 inch pieces, I noticed that one of the sides of the pieces had an area that had started to decay. This made me realize that I needed to slow down, wash off and inspect the pieces one by one.
Sometimes by batching and trying to quickly accomplish a task we miss something important. It also was a great reminder to slow down and enjoy the process of making this dish that I only get to have in the spring.
So I intentionally took the time to appreciate the color with its vibrant red and streaks of pink. I delighted in the snap of how fresh they were as I cut the pieces and noticed how pretty the sun was sparkling on the water droplets that glistening on the stocks.
I took the simple act of cutting rhubarb into chunks and made it quite enjoyable. You can take a simple act of pretty much anything and with curiosity and presence make it delightful.
By the way, my favorite way to make rhubarb now is quite simple and so much better than simply stewed. So if you are a fan of rhubarb, I know you're going to love this even more.
How to make scrumptious rhubarb:
Place the 1 inch pieces in a bowl and sprinkle with Demerara sugar (about 1/3 cup to 3 cups of rhubarb). Add 1/2 tsp of Vanilla, 1 tablespoon of melted butter and a dash of salt. Pour all this on a baking sheet and roast in the oven at 425 degrees for about 25 minutes until the juice begins to thicken and caramelize. I usually stir it a couple times while it roasts. Be sure to remove it from the pan soon after taking it out, as the thickened juices will begin to harden and stick to the pan. You can eat it just like this, put over oats, yogurt or spoon it over shortcakes and add whipped cream. Yum!
